Slow Cooker Mashed Potatoes
My friend Leigh Anne’s slow cooker recipes are changing my life! I’ve been able to make so many yummy dishes EASILY thanks to her cookbook. This Holiday Slow Cooker cookbook is showing me so much that I can make in the slow cooker (rolls! desserts! a WHOLE turkey! mashed potatoes!).
Slow Cooker Mashed Potatoes
Ingredients
- 2 lb potatoes, quartered rinsed and scrubbed before quartering
- 1 tsp Italian seasoning
- 1 tsp salt
- 1/2 tsp pepper
- 1/2 tsp garlic powder (or head of roasted garlic)
- 1/2 c chicken broth
- 1/2 c butter
- 1/3 c cream (or milk)
Instructions
- Spray the inside of a 6 quart slow cooker with cooking spray.Add the potatoes, seasonings, roasted garlic, and chicken broth.Cook on low for 3 hours or on high for 1 - 1 1/2 hours.Place potatoes in a stand mixer or use a hand mixer to blend.Add the butter and cream/milk slowly, a little at a time. You may need additional cream to get the consistency of the potatoes you prefer.Add more seasonings, esp. salt to taste.Can keep warm in the slow cooker until ready to serve.

It says to add the milk slowly when blending but milk is not listed in the recipe ingredients. Wanted to make this today but now I can’t because I don’t know how much milk to put in.
So sorry for the confusion – it’s cream or milk! Either work great!
