This Strawberry Pecan Salad is filled with strawberries, pecans, red onions, crumbled goat cheese, & a delicious strawberry poppyseed dressing. It is a crowd pleaser and the perfect salad to bring to a gathering, a dinner with friends or family, or for a bridal or baby shower.

If you’re looking for a staple salad to serve as a side dish with almost any main dish dinner meal, or need a tried and true salad to bring to get togethers, this Strawberry Pecan Salad is it! It’s really simple to throw together and it really is a salad that everyone loves.

First reason I love this salad: Easy to throw together. If you purchase pre-washed arugula, pre-crumbled goat cheese, and a package of sweetened pecans, all you need to do for this salad is slice some strawberries and dice up the red onions! That’s it. The dressing is a mixture of two of my favorite dressings from Briannas (the poppyseed dressing and the strawberry blush vinaigrette). It’s so simple you just mix them together with an equal ratios and drizzle on top.

Second reason I love this salad: The layers of flavor. The arugula is crisp and peppery, the strawberries are fresh and sweet, the red onions are savory and add depth, the goat cheese add the perfect creaminess, and the pecans add the perfect sweet crunchy texture. Top it off with the creamy and bright flavors of the dressing and you have a really well-rounded set of flavors and textures in a surprisingly simple salad.

If you’re going to prepare this salad ahead of time for a get-together, just add all the salad ingredients into a bowl (don’t toss, just layer the ingredients – it will look really pretty), and then cover the bowl with cling wrap and chill. Then mix up the dressing in a separate container and bring separately to your gathering. Right before it’s time to eat, drizzle the dressing all over the salad and serve. I find that if you don’t toss it, it actually is easier to get some of each item in every serving, and better yet it doesn’t get soggy.

Ingredients

Salad Ingredients

  • 2 containers (5 oz. each) arugula
  • 1 container (16 oz.) fresh strawberries, sliced into fourths
  • 1 container (4 oz.) crumbled goat cheese
  • 1/2 red onion, diced
  • 1 package (3.5 oz.) sweetened pecans

Strawberry Poppyseed Dressing

  • 1/2 cup Briannas poppyseed dressing
  • 1/2 cup Briannas strawberry blush vinaigrette dressing

Instructions

Salad Assembly

  • In a large salad bowl, add all of the arugula (or as much as your bowl will fit).
  • On top of the arugula evenly distribute all of the diced red onions, then the pecans, and then the crumbled goat cheese.
  • Top the salad off with the sliced strawberries. Cover and chill until ready to serve.

Strawberry Poppyseed Dressing

  • Mix the dressings together with a whisk or fork. You can alter the amount easily just using a 1:1 ratio of each dressing.
  • Store the dressing chilled in an airtight container until ready to serve.
  • Once ready to serve, dress generously and serve with tongs!
    (If you don't toss it, it will be easier to get some of everything in each bite, and helps keep the salad from getting soggy.)
