Spaghetti Margherita

Last month some girlfriends and I had a dinner together at a friend’s house. She introduced me to this amazing yet simple recipe for pasta from Si at A Bountiful Kitchen. It’s kind of like a caprese salad in pasta form, but a lot more filling. It somehow manages to taste like a really fresh garden dish but also feel like comfort food. This Spaghetti Margherita is so simple and delicious, you need to add it into your meal rotation.

Start by buying some fresh grape tomatoes, a lot of fresh basil and mozzarella, and some good pasta. I actually used bucatini because it’s a little thicker than spaghetti. Any long cut pasta will work great in this dish! I bought my tomatoes at Costco, along with my mozzarella balls – I love that they come in a delicious herb and oil mixture – gives them a lot of flavor. Add a little fresh parm and some garlic, and this meal comes together really easily.

Beforehand, slice all the tomatoes in half. Then once you get the pasta cooking, start cooking the tomatoes. Cooking them down results in such a sweet and fresh flavor. Even my kids love this Spaghetti Margherita.

Spaghetti Margherita

Ingredients

  • 1 lb spaghetti (or other long pasta)
  • 1/4 c. extra virgin olive oil
  • 2 tbsp. butter
  • 2 cloves garlic, minced
  • 2 lbs. grape tomatoes, chopped in half
  • 1 c. fresh basil, chopped
  • 1 tsp. sugar
  • 1 tsp. salt
  • 1/2 tsp. fresh ground pepper
  • 1/2 lb. fresh mozzarella, cut into 1/2 inch cubes
  • 1/2 c. fresh Parmesan, grated or shaved

Instructions

  • Begin heating lightly salted water for pasta in a large pot. 
  • Meanwhile, in a large skillet, heat oil and butter over low heat. Saute the garlic until fragrant over low heat, about 1 minute. 
  • Add tomatoes, sugar, salt and pepper. Cover and cook for 10 minutes.  (Meanwhile cook pasta and strain.)
  • Add basil, and pasta to pan with tomatoes. Cook for 2-3 minutes, just until all pasta is heated through and coated with tomato sauce.
  • Just before ready to serve, pour into serving bowl, toss with fresh mozzarella and grated cheese, and more fresh basil if desired. Serve at once with additional grated cheese, if desired. Serves 4-6.
