This Homemade Disney Copycat Cornbread is a cross between yellow cake and cornbread – so sticky and delicious everyone will love it.

Years ago I saw an article about “Disneyland Cornbread” – not sure if this is still accurate, but it claimed Disneyland cornbread was so good because it was actually half cornbread and half yellow cake. The article claimed you mix a yellow cake mix with 2 boxes of corn muffin mix, and voila, easiest sweet cornbread.

I tested the theory years ago and since then this Homemade Disney Copycat Cornbread has been the only cornbread my family likes – not too gritty or dry like many cornbread recipes. This one is such a crowd pleaser. And topped with some honey butter? Alongside this Boilermaker Tailgate Chili – It’s part of the best fall meal.

The thing I love about this Cornbread is how moist and sticky it is. Not dry at all!

All you need to do is buy a boxed yellow cake mix, 2 boxes of Jiffy corn muffin mix, add them to a bowl along with the ingredients required for each, plus a little extra sugar. Then simply bake in a 9×13″ pan. Easy!

Homemade Disney Copycat Cornbread

This Homemade Disney Copycat Cornbread is a cross between yellow cake and cornbread – so sticky and delicious everyone will love it.

Ingredients

  • 1 box yellow cake mix
  • 2 boxes Jiffy corn muffin mix
  • 5 eggs
  • ½ cup oil
  • 1 cup water
  • 2/3 cup milk
  • 1/3 cup white sugar

Instructions

  • Preheat oven to 350°F. Spray a 9×13" pan generously with cooking spray and set aside.
  • Mix all ingredients together in a large bowl until well combined.
  • Pour batter into prepared pan and bake for 35-45 minutes until the top of the cornbread springs back to the touch.
  • Cut into squares and enjoy!

  1. My family loved this cornbread! I already have a recipe I use, but couldn’t resist trying this because of the unique ingredients and the Disneyland reference. It did not disappoint. Mine sunk in the middle, and I was worried it would be overly dry and crumbly based on its appearance (mine, definitely not your beautiful pictures), but it was incredibly moist and absolutely fantastic.
