One of our favorite parts of living in Oregon is the amazing blueberry picking every summer. Not only is it such a fun way to spend time as a family, but Oregon Blueberry Growers have some of the prettiest farms and the most beautiful views in the state. It’s a wonderful way to experience summer in the Pacific Northwest.

Oregon Blueberry Farms

Oregon has tons of local blueberry picking farms! This summer we went to pick blueberries at one of our all-time favorite places – Hoffman Farms. We’ve been taking our kids here since they were tiny. Hoffman Farms is a lovely farm with tons of berries for picking, an adorable farm store, delicious treats for sale, and even (my kids’ favorite) a huge playground made out of a large tractor.

There are lots of farms for blueberry picking in Oregon – check out this list to see all of them by county. Picking berries at a local Oregon farm is really an experience you don’t want to miss – the berries taste unreal they are so fresh! And it’s a great memory for anyone, no matter your age.

And the best part of picking local berries is that you get an experience and delicious food out of your visit. The flavor of this galette is the perfect mixture of sweet, tart, and fresh. Even my son who doesn’t like plain blueberries loves this galette! It combines fresh blueberries, fresh lemon zest and lemon juice, with sugar and a little cinnamon to give it extra flavor. These sweet berries bubble and turn into a sweet jam-like consistency in the oven. They are surrounded by the flakiest, and easiest, pastry crust that is topped with sugar crystals – giving each bite a sweet crunch.

What is a Galette?

A galette is a type of rustic, free-form pastry from France. It is made with pie dough that is rolled out and then filled with anything from sweet to savory ingredients. The dough is folded over the edges of the filling, leaving the center exposed, giving the galette its characteristic rustic appearance. And what I love most about a galette, is how EASY it is to make! You don’t need a perfect pie crust or edges… just haphazardly roll out your dough, place the filling in the middle, and fold the edges over. And the flavor is really enhanced by the sugar crystals on the edges, which add a sweet crunch.

Ingredients for Blueberry Galette

Because galettes are so simple, you only need a few ingredients! All you need for this Easy Blueberry Galette is:

  • fresh Oregon blueberries
  • lemons
  • cinnamon
  • salt
  • cornstarch
  • flour
  • butter
  • coarse sugar
  • egg wash

Easy Blueberry Galette

Ingredients

Pie Crust

  • cups all-purpose flour
  • 1/2 cup unsalted butter (1 stick), chilled and cubed
  • 1 tablespoon white sugar
  • 1/2 teaspoon salt
  • 1/2 cup ice water

For Topping on Crust

  • 1 egg beaten
  • 1 tablespoon turbinado sugar / crystalized sugar

Blueberry Filling

  • 4 cups fresh blueberries
  • 1/2 cup white sugar
  • 2 tablespoons cornstarch
  • 1/4 teaspoon cinnamon
  • zest of 1 lemon
  • juice of 1 lemon (about 2 tablespoons)

Instructions

Pie Crust

  • In a bowl, mix flour, sugar, and salt, then cut chilled butter into mixture with 2 knives, or using your fingertips. Create a crumbly mixture by breaking the butter and combining with flour.
  • Once you have fine crumbles, begin adding iced water (a tablespoon or two at a time) and continue mixing gently until it forms into a dough ball.
  • Turn out onto a floured surface and gently knead dough into a ball, until it just comes together.
    Wrap in plastic and let chill for 30 minutes in fridge or 15 minutes in freezer.
  • Preheat oven to 375°F and line a baking sheet with parchment. Set aside.

Blueberry Filling

  • While your dough is chilling, mix together your filling.
    In a large bowl, add the fresh blueberries. Mix them with the sugar, cinnamon, and cornstarch, until evenly coated.
  • Next add in the lemon zest and lemon juice. Mix until well combined. Set aside.

Galette Assembly

  • Once dough has chilled, remove from fridge.
    Roll out pie dough to about an 11" round(ish) shape. Transfer dough to parchment lined baking sheet.
  • Carefully spoon blueberry mixture into center of dough, leaving a 2-3" border. Fold dough over and pinch to enclose blueberries on the edge, leaving the center open.
  • Brush crust with egg wash and sprinkle with coarse sugar/turbinado sugar.
  • Bake for 40-45 mins, until crust is golden and juices are bubbling. If crust is getting too golden and blueberries still aren't bubbling, cover with aluminum foil and cook an extra couple of minutes until it's bubbling.
  • Once bubbling, remove from oven and allow galette to cool on sheet pan for 10-15 minutes before serving, to let juices set.
  • Serve with ice cream or whipped cream. Enjoy!
