Guacamole Snack Board
If you saw my post a couple weeks ago, you know we love celebrating #SummerFridays. And today is an especially good day to make this guac because it’s #NationalAvocadoDay ! Avocados are one of my all-time favorite foods – they taste amazing on almost everything: burgers, tacos, sandwiches, ethnic food, dips, sauces, and salads. One of my favorite foods.
The weeks have been long lately… one simple way to make the end of the work week a little more fun is to create an Easy Guacamole Snack Board.
This Afternoon Snack is beyond simple, but looks really nice. When I set this out on the table or counter everyone keeps coming back for more. Every Friday this summer should be an #AVOccasion ; ) Find Mission Avocados in your grocery store produce section.
The star of this snack board show is definitely the Guacamole made with Mission Avocados! I’ve been making this for years and anywhere I bring it, people always want the recipe. It’s the perfect mix of flavor and brightness from the limes, and tons of fresh ingredients.
Best Ever Guacamole with Mission Avocados
- 3 large Mission Avocados
- 1/8 cup fresh squeezed lime juice
- 1/2 cup cilantro, chopped fine
- 1/2 red onion, diced small
- 1/2 jalapeno, diced very small, remove seeds (optional)
- 1/2 teaspoon salt (can add more as needed, to taste)
Pour the lime juice over the diced onions. Let sit for about 5 minutes.
In a separate bowl, roughly mash the avocados with a fork (leave some chunks!), then add remaining ingredients, including onions and citrus juice, and mix lightly. If needed, add more salt to taste.
Serve immediately. Enjoy! (To store, keep airtight, and sprinkle with some additional fresh lime juice on top to keep from browning.)
Next time you need an amazing guacamole recipe, this is the one. Trust me! You’ll love it.
After you make the guac, scoop it into a bowl and place in the center of a large board. Layer with lots of tortilla chips, limes, and fresh veggies. You can also add salsa or any other sauces you’d like.
It’s seriously the simplest afternoon snack. Almost no prep except for the guac. It looks and tastes amazing!
