BBQ Pork Sliders with Sweet Lime Slaw

Lately we’ve been fumbling through distance learning school. It’s taken up most of my time during the days so I’ve been looking for dinners I can make easily ahead of time – especially in the slow cooker. Anyone else just need an easy but filling dinner for weeknights?

These BBQ Pork Sliders with Sweet Lime Slaw are so easy and a real crowd pleaser. Just throw the pork loin in the slow cooker early in the day. Let it cook and just before dinner shred and dress it up a bit.

You can also make the Sweet Lime Slaw early in the day (we love this Sweet Lime Slaw – I also use it on my fried chicken sandwiches). Just refrigerate the slaw until you’re ready to serve.

The last thing you’ll need are some store-bought slider buns. You could make rolls too (these are our favorite homemade rolls), but honestly for a quick weeknight dinner having some store-bought slider buns makes this meal so dang simple.

The pork is flavorful and simple – you start with pre-made BBQ sauce and doctor it up a bit. It’s savory and tangy, combined with the sweet lime slaw, and soft buns – delicious!

BBQ Pork Sliders with Sweet Lime Slaw

Ingredients

Slow Cooker BBQ Pork

  • 2 lb. pork loin (boneless)
  • water
  • 2 teaspoons garlic salt
  • 3 tablespoons garlic, minced
  • 1 cup BBQ sauce (I prefer a sweet BBQ, but use what you like best)
  • 2 tablespoons apple cider vinegar
  • 1/2 cup broth from slow cooker juices

Sweet Lime Slaw

  • 3 cups shredded cabbage, any color
  • 1 cup shredded carrots
  • 1/4 cup mayo
  • 1 tablespoon vinegar (white)
  • 2 tablespoons sugar
  • 1/4 teaspoon salt
  • juice of 1 lime

For Sliders

  • 1 package slider buns
  • extra BBQ sauce
  • lime wedges, for serving, optional

Instructions

Sweet Lime Slaw

  • I like to make the slaw first and chill it while prepping the other ingredients. You can make the slaw early in the day and chill it, or make it just before you eat. Cabbage doesn't wilt easily so it will hold up well if you make it early.
  • In a medium-sized bowl combine shredded cabbage and shredded carrots.
  • In a separate small bowl, combine mayo, sugar, vinegar, salt, and lime juice. Whisk well to remove all clumps.
  • Once well-mixed, pour over cabbage and carrot mixture. Mix well until well coated. Cover and chill until ready to serve.

Slow Cooker BBQ Pork

  • Place pork loin in the slow cooker and add water so it comes 2 inches up the side of the slow cooker.
  • Add garlic salt and minced garlic. Cook on high for 4-5 hours or low for 6-7 hours.
  • Once cooked, remove pork loin from slow cooker and shred with 2 forks.
  • Once shredded, add 1 cup of BBQ sauce, vinegar, and broth from slow cooker. Mix until well combined. Set aside.

Assembly

  • To assemble, top each slider bun with a scoop of the BBQ pork, then top with Sweet Lime Slaw. If desired, also top with additional BBQ sauce and/or lime juice. Enjoy!
