🌿As much as I love treats, I love salads and veggies so much. I crave them when there are too many sweets around.

🍂This Fall Harvest Salad is filled with Brussels sprouts, kale, candied pecans, pomegranates, bacon and goat cheese crumbles. Also a sweet maple mustard dressing.

It’s one of my favorite salads of all time.

🥫Here’s what makes this the Best Spaghetti and Meatballs ever:⁣
⁣
• I add PROSCIUTTO and RICOTTA to the meatballs.⁣ Adds so much flavor to the meat and a deep saltiness.
• The sauce is just crushed delicious San Marzano tomatoes with a little garlic and herbs.⁣
• The pasta is actually Bucatini (not spaghetti). Bucatini is one of the best (and easiest) ways to uplevel your spaghetti. It’s so much thicker than spaghetti and it’s hollow inside which creates another nook and cranny for sauce. (Most grocery stores carry it near the nicer pastas, just next to the boxed pastas. It’s usually only $1 more than normal spaghetti.)⁣

You can never go wrong with my all time favorite Chocolate Chip Cookies.

If you make a bunch of these you can freeze the cookie dough balls and just bake a couple when you need them. The gift that keeps on giving!

I’m Shannon and my husband is Mitch & we live in Portland🌲. Our kids somehow got a genetic trait that allows them to stop eating even when they are full. That definitely didn't come from me.

Here are some random facts about me -
• There’s almost no food I don’t like. It’s a problem.
• If I can be wearing socks, I'm wearing socks.
• If there's chocolate on the menu, I'm ordering it.
• If there's volleyball, I'm playing it.
• If there's anything to be anxious about (or even not), I'm anxious.
• My special secret talent is making other people anxious too.
• I run this food blog and another IG page with a friend @8minuteclasses
• I have a hunch I'm claustrophobic. Maybe it's just that my kids haven't been to school since March.
• I’ve moved 21 times in my life😩
• My favorite dessert has always been and will always be chocolate chip cookies! For life 🍪🍪
• I grew up in Seattle, was raised Buddhist, and at heart I’m a hippie who loves the environment and health food stores, but in practice I’m a suburban mom of 4 who shops at Costco and likes Diet Coke. 😄🤷🏼‍♀️ Can’t really explain it but it’s true.

I think I might figure out a way to bathe in caramel buttercream. It’s that good.

🍎The caramel apples on top are not necessary but oh so fun.
