These Simple Roasted Brussels Sprouts get crispy caramelized edge when roasted – they are the perfect side to any meal.

Roasting Brussels Sprouts brings out the rich almost sweet flavor. I love the texture of the crispy edges cooked with the olive oil and salt. Even my kids like these!

Be sure to use a rimmed baking sheet, so the oil doesn’t drip off the sides – I love these rimmed baking sheets!

Simple Roasted Brussels Sprouts

These Simple Roasted Brussels Sprouts get crispy caramelized edge when roasted – they are the perfect side to any meal.

Equipment

  • parchment paper
  • rimmed baking sheet

Ingredients

  • 1 lb. fresh Brussels sprouts
  • 2-3 tablespoons olive oil
  • 1/2 teaspoon salt

Instructions

  • Preheat oven to 400°F.
  • Line a large rimmed baking sheet with parchment paper and set aside.
  • Cut Brussel sprouts, by first cutting off the bottom edge, then slicing in half lengthwise, from the flat edge to the top.
  • Arrange cut Brussels sprouts on the parchment-lined baking sheet, in a single layer.
  • Drizzle with olive oil then toss with your hands (or 2 large spoons) to coat evenly.
  • Once evenly coated, sprinkle the salt generously over the top. I love flaked sea salt for this recipe.
  • Bake in the preheated oven for 20-30 minutes, until the Brussels sprouts are lightly charred, and a fork goes through them easily. Watch them closely at the end to ensure they don't burn.
  • Transfer to a bowl, and if desired add a little more salt to taste. Enjoy!
