Peach Burrata Salad with Balsamic Vinaigrette

Ahh, the post Halloween detox begins. We’ve had too much sugar the past week so I’m focusing on some healthier meals this week filled with lots of real ingredients.

This Peach Burrata Salad with Balsamic Vinaigrette is so flavorful – sweet peaches, creamy burrata cheese, salty bacon & candied pecans.

Grilling the peaches gets them slightly soft and so so sweet – combined with the salty bacon, creamy burrata, and sweet pecans, this salad is so flavorful it’s going to become one of your new favorites.

What is Burrata?

When I use burrata I get a lot of questions about it – here’s a little more info – burrata is a cheese made from mozzarella and cream. It comes in a ball form – could be large or small (I like to get the smaller balls for salads – the larger ones work better for appetizers).

The outer shell is thick fresh mozzarella, while the inside contains a mixture of shredded fresh mozzarella and cream – it is soft and will slightly ooze out when you cut into it. Think of it as the creamiest mozzarella you’ve ever had. You can use it in place of mozzarella in any recipe – salads, sandwiches, appetizers … it’s especially good with caprese salad.

Peach Burrata Salad with Balsamic Vinaigrette

This Peach Burrata Salad with Balsamic Vinaigrette is so flavorful – sweet peaches, creamy burrata cheese, salty bacon & candied pecans.
Serves 4-6 as a side salad, or 2-3 as a main dish.

Ingredients

Balsamic Vinaigrette (or you can use a pre-made balsamic dressing)

  • 1/3 cup balsamic vinegar
  • 1/3 cup olive oil
  • 3 tablespoons sugar
  • 1/8 teaspoon salt

Salad Ingredients

  • 8 cups spinach
  • 1 peach, sliced
  • 1 cup diced, candied pecans
  • 6 slices bacon, cooked and crumbled in small pieces
  • 4 oz. burrata
  • olive oil and salt

Instructions

Balsamic Vinaigrette

  • Whisk all ingredients together in a small bowl, or shake together in a sealed mason jar or tupperware container.
  • Set aside until ready to serve – I like to make this about 20 minutes ahead of time so the sugar has time to dissolve and thicken up the dressing.
  • Shake well before serving.

Grilling the Peaches

  • Heat grill (or grill pan) to medium heat. Let it get warm for about 5 minutes.
    Lightly brush grill (or grill pan) with olive oil.
  • Place peach wedges onto grill. Grill for 5 minutes on each side, or until they start to get slightly soft. The softer they get the sweeter they'll be.
    Once done, remove from grill and set aside.

Salad Assembly

  • Begin making salad by filling a large bowl with spinach.
  • On top of the spinach, arrange the peach wedges nicely.
  • Sprinkle candied pecans and bacon on top.
  • The burrata can be slightly messy so you can dress and toss the salad with the dressing before putting the burrata on, if you'd like.
    If you don't mind the mess, add the burrata here and then dress.
  • To add the burrata to the salad, place the balls of burrata on the salad and tear or cut them open in small chunks. Layer the burrata around the salad.
