This Smoked Salmon Veggie Bowl with Sesame Ginger Vinaigrette has cucumbers, edamame, avocado, & salmon covered in a delicious dressing. It is a fast and delicious meal – perfect for a lunch, dinner, or as a side dish.

I love the flavors of Asian recipes – I find the spices and sauces to be complex in flavor and also fresh and satisfying! This Veggie Bowl is similar to a Poke Bowl but made with smoked salmon instead of tuna – I find it easier to work with than raw fish. I do love Poke Bowls but making this at home is such a simple meal – and I love smoked salmon.

You will love this bowl because of the flavors of the dressing and how they complement the simple veggies. The best part of this veggie bowl is how you can adapt it for your family – if you don’t like fish you could sub steak or chicken. Or if there are certain veggies you’d like to add, you could throw them in. Or to make it more filling you could add rice.

Smoked Salmon Veggie Bowl with Sesame Ginger Vinaigrette

Ingredients
Bowl Ingredients
- 4 oz. smoked salmon
- 2 cups shelled edamame (called mukimame in frozen section)
- 2 cups sliced cucumbers
- 1 avocado, diced
- 2 tablespoons sesame seeds
Sesame Ginger Dressing
- 2 tablespoons olive oil
- 1 tablespoons sesame oil
- 2 tablespoons soy sauce
- 3 tablespoons rice vinegar
- 1 tablespoon honey
- 1 teaspoon grated or minced ginger
Instructions
Dressing
- Mix all ingredients in jar and whisk to combine. Set aside.
Bowl
- First, steam the mukimame in the microwave according to the bag instructions. Most will have you steam the mukimame in the bag.
- Slice the cucumbers, avocado, and salmon.
- Start by layering your bowl with the edamame, the cucumbers, avocado, and smoked salmon.
- Top with sesame seeds and then generously pour the dressing over the bowl. Toss to mix well and enjoy!
- (This veggie bowl stores well in the fridge for up to 2 days.)
