Ingredients

Bowl Ingredients

  • 4 oz. smoked salmon
  • 2 cups shelled edamame (called mukimame in frozen section)
  • 2 cups sliced cucumbers
  • 1 avocado, diced
  • 2 tablespoons sesame seeds

Sesame Ginger Dressing

  • 2 tablespoons olive oil
  • 1 tablespoons sesame oil
  • 2 tablespoons soy sauce
  • 3 tablespoons rice vinegar
  • 1 tablespoon honey
  • 1 teaspoon grated or minced ginger

Instructions

Dressing

  • Mix all ingredients in jar and whisk to combine. Set aside.

Bowl

  • First, steam the mukimame in the microwave according to the bag instructions. Most will have you steam the mukimame in the bag.
  • Slice the cucumbers, avocado, and salmon.
  • Start by layering your bowl with the edamame, the cucumbers, avocado, and smoked salmon.
  • Top with sesame seeds and then generously pour the dressing over the bowl. Toss to mix well and enjoy!
  • (This veggie bowl stores well in the fridge for up to 2 days.)
