Honey Lime Chicken Bowls

The Honey Lime Chicken bowls are EASY, healthy, and so good. The Honey Lime Chicken comes from the Six Sisters Stuff Honey Lime Chicken Enchiladas. I made the chicken with their marinade but put it in the crock pot on low for 5 hours. Then I cooked up some jasmine rice, sauteed bell peppers, and made some guac with mashed avocados, salt, and lime juice. Throw it all together on a bed of lettuce with a dollop of sour cream and you have a really delicious and healthy dinner. We loved it!

Honey Lime Chicken Bowls

Ingredients

Honey Lime Chicken

  • 3-5 chicken breasts (1-1.5 lbs)
  • 6 tbsp honey
  • 5 tbsp lime juice fresh
  • 1 tbsp chili powder
  • 1/2 tsp garlic powder

Bowl Ingredients

  • 4 c cooked rice brown or white
  • 2 bell peppers, sauteed any color
  • 2 avocados
  • lettuce and/or spinach
  • lime juice to taste
  • salt to taste
  • sour cream optional topping
  • salsa optional toppin

Instructions

  • Combine marinade ingredients in slow cooker. Add chicken and coat. Cook on low for 4-5 hours (or high for 2-3 hours).
  • Before chicken is done, begin prepping other ingredients. Cook rice, sautee peppers, and wash lettuce.
  • Mash avocados with salt and lime juice to taste.
    Remove chicken from crock pot and chop or shred.
  • Assemble bowls with lettuce or spinach, bell peppers, rice, chicken, guac, and sour cream or salsa to taste. Drizzle some of the marinade sauce over the top (it's so good!), and enjoy!

  1. How much chicken do you cook in the marinade and do you use white or dark meat? (The marinade ingredients are part of your recipe, but the weight of the chicken is missing.
