Smashed Blackberry Basil and Goat Cheese Toasts

Toast + fruit + cheese is my heaven! I’ve been missing toast on my low calorie eating plan this month, so I decided to make a really good but light toast recipe. These Smashed Blackberry Basil and Goat Cheese Toasts are just.so.good. Try them!

I found some Ezekiel bread which is low calorie but also full of nutrients. I toasted it first, then spread the honey goat cheese on top, then added the smashed blackberries, a sprinkle of light mozzarella cheese, and chopped basil. Then I broiled the toasts to melt the cheese and cook the blackberries a bit. This whole meal only has 380 calories which is crazy considering how filling these are! I hope you love them like I do.

Smashed Blackberry Basil and Goat Cheese Toasts

Ingredients

  • 2 slices Ezekiel bread or other hearty wheat bread
  • 4 tbsp honey goat cheese from Trader Joes (4 tbsp = 2oz) (if you don't have a Trader Joes nearby, just buy normal goat cheese and drizzle honey on top of the toast)
  • 10-15 fresh blackberries
  • 1-2 oz. light cheese, shredded (I used mozzarella)
  • 3-4 basil leaves, chopped

Instructions

  • Toast bread in toaster or in oven, until slightly browned.
  • Spread 2 tbsp. of goat cheese on each slice of bread.
  • Smash blackberries in a bowl and spoon on top of goat cheese toasts.
  • Sprinkle the shredded cheese (only a small amount) on top of blackberries.
  • Sprinkle each toast with shredded basil.
  • Broil on high for 4-6 minutes, depending on how dark you like your cheese. Once the blackberries are bubbling slightly it will taste amazing! Remove from oven and enjoy!

Writing this post days after I made these is making me salivate! These Smashed Blackberry Basil and Goat Cheese Toasts are soo delicious… Like the best toast / grilled cheese /fruit bruschetta / fresh fruit + cheese dish you can imagine. I love all these flavors together and hope you will too.
