Grilled Steak and Asparagus Salad
As part of my Year of Intentional Living project, I’m working on health in January. I’ve been really watching what I eat and especially trying to control my PORTIONS. I love healthy food but I can easily eat way too much of it, making it not really that healthy anymore. I put together this Grilled Steak and Asparagus Salad to be filling and satisfying, but not super calorie dense. Normally I put lots of candied nuts and cheese in my salads, which add a ton of calories. For this salad, I didn’t use any nuts and also used a light amount of Gorgonzola – which still adds a lot of flavor without too much cheese. Gorgonzola, grilled steak, and grilled asparagus go so well together! I hope you love this salad as much as I do. (And if you don’t have a grill you can pan sear the steak 😉
Grilled Steak and Asparagus Salad
Ingredients
- 4 c fresh spinach leaves
- 1 bunch asparagus
- 1/4 red onion, diced finely
- 1/3 c Gorgonzola cheese, crumbled
- 1 lb skirt steak
- Bacon Onion Vinaigrette (from Trader Joes)
Instructions
Grilled Steak
- Start by prepping your steak. Remove from fridge and generously salt and pepper each side. Heat the grill or pan for at least 5 minutes before putting the steak on. Grill or pan sear your steak on a medium high heat for 4-5 minutes on each side (depending on how thick your steak is and how done you'd like it - test inside for doneness.) We like it a little pink inside.Once steak is grilled, remove from grill or pan and set aside to rest. Then continue prepping the rest of the salad. Once it has rested, cut into thin pieces.
Grilled Asparagus
- Heat oven to 400 degrees (you can also grill asparagus if you'd like). Cut off ends of cold, uncooked asparagus (about 1 inch). Remove ends.Place asparagus on a baking sheet. Drizzle with olive oil and salt/pepper. Roast for 10-15 minutes until asparagus is soft, and starting to brown.Remove and chop into inch long pieces.
Assembling Salad
- In a large salad bowl, mix spinach, red onions, and asparagus. Once steak has rested and been cut, lay it on top of the salad.Top the salad with the Gorgonzola. Drizzle dressing on top! (If you don't have this Trader Joes dressing - which is delicious! You can top with any light vinaigrette - balsamic, red wine, or sweet onion.)Toss and enjoy!
A note for the dressing – this Sweet Onion and Bacon Vinaigrette from Trader Joes is AMAZING. I hope you can find it! If not, just use any balsamic or other light vinaigrette you have.
