Chewy Microwave Caramels

These Chewy Microwave Caramels are so easy to make (and failproof!). They are chewy and delicious and take only 6 minutes to make.

One of our favorite Holiday Desserts is caramels. They are rich and flavorful without the hassle of cooking on the stovetop with a thermometer and worrying about the sugar burning. Just throw the ingredients into a large microwave safe bowl, and heat for 2 minute intervals, 3 times, stirring after each interval.

That’s it! Then take them out, pour into an 8×8″ pan that’s been sprayed with cooking spray (so they don’t stick), let them set, and cut into pieces. Wrap each piece up in wax paper and, bam, you have an easy but delicious holiday treat. You can even add sea salt if you want salted caramels.

We give these out (along with the best creamy fudge) to neighbors every year. I love making candies like fudge and caramels because they last for days without going bad, and they’re easy to box up and transport to neighbors. I do love bringing cookies to neighbors but they can be messy / crumb-y when boxed up with other treats.

Chewy Microwave Caramels

These Chewy Microwave Caramels are so easy to make (and failproof!). They are chewy and delicious and take only 6 minutes to make.

Equipment

  • Wax Paper
  • 8×8" Pan
  • Cooking Spray
  • Rubber Spatula
  • Large Microwavable Bowl (bowl must be large so caramel doesn't bubble over)
  • Microwave

Ingredients

  • 1/4 cup unsalted butter (1/2 stick)
  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 1/2 cup sweetened condensed milk
  • 1/2 cup light corn syrup
  • optional: flaked sea salt on top (for salted caramels)

Instructions

  • Spray bottom and side of an 8×8" pan with cooking spray. Set aside.
  • Place all ingredients in large microwavable bowl. Don't stir.
  • Place in microwave for 2 minutes.
  • Remove and stir with a rubber spatula until well incorporated.
  • Place back in microwave for 2 minutes.
  • Remove and stir again with rubber spatula until well incorporated.
  • Place back into microwave for 2 more minutes.
  • Remove (use a hot pad – it will be hot!), and pour right into 8×8" pan. (Don't mix.)
  • Pour evenly into pan. (If you want sea salt caramels, this would be the time to sprinkle with flaked sea salt.)
  • Let caramel set for at least an hour before cutting (try to cut within 6 hours of making – it can start to get harder after that). Cut up wax paper into small pieces. Cut caramel into small squares or rectangles, then wrap in small pieces of wax paper.

Notes

*Note:  microwaves can vary in their wattage and power. If you make these and they end up too hard, try another batch removing 30-45 seconds on the last session in the microwave
