Queso Breakfast Burritos with BBQ Sauce are filled with refried beans, hash browns, sausage, eggs, cheese, queso, and lots of BBQ – trust me! I know it might sound like a strange combo, but’s actually delicious and the perfect creamy and sweet addition to your typical breakfast burrito. (And you know we love breakfast food around here.)

A couple months ago my husband was making us breakfast burritos on a Saturday (one of his all-time favorite foods), and experimented with a unique combination: BBQ sauce and queso on the burrito. He immediately said, “whoa you have got to try this!” And I was equally floored. The combo is delicious. Creamy queso with that tangy and sweet BBQ. You’re just going to have to trust me on this one. These Queso Breakfast Burritos with BBQ Sauce are one of those combinations you might not expect – but once you try it, you’ll never want a plain breakfast burrito again.

The warm refried beans, crispy hash browns, savory sausage, fluffy eggs, melty cheese, creamy queso, and sweet + tangy BBQ sauce come together in the best way. The BBQ sauce gives just the right amount of sweetness to balance the richness of the eggs and sausage. And the queso? Well, queso makes everything better.

Why BBQ Sauce on a Breakfast Burrito?
I know it might sound a little unusual — but think about it:

Ingredients You’ll Need for Queso Breakfast Burritos with BBQ Sauce
- Large flour tortillas
- Refried beans (warmed)
- Frozen hash browns (cooked until golden & crispy – I use the air fryer))
- Breakfast sausage (browned)
- Scrambled eggs – I cook them lightly so they don’t get too dried out
- Shredded cheese (Monterey Jack or Cheddar work great)
- Queso dip (I use store-bought)
- BBQ sauce (choose one with a little sweetness – you can also use my homemade BBQ sauce)
Make-Ahead & Freezer Friendly
These burritos are also great for meal prep. Assemble, wrap in foil or parchment, and freeze. When you’re ready to eat, simply microwave or heat in the oven until warmed through. Perfect for busy mornings or easy weeknight dinners.
Queso Breakfast Burritos with BBQ Sauce

Ingredients
Refried Beans
- 1 can refried beans (16 oz.)
- 2 tablespoons heavy cream
- 1/8 teaspoon garlic salt
Scrambled Eggs
- 10 large eggs
- 3 tablespoons heavy cream
- 1/4 teaspoon salt
- 1 tablespoon butter, unsalted (for pan)
Additional Burrito Ingredients
- 8-10 flour tortillas (burrito or soft taco size)
- 1 lb. breakfast sausage links (can also use ground sausage)
- 6 pieces breakfast hash brown patties (the texture of these is better than loose hash browns because they will get crispy on the outside and chewy inside)
- 2 cups shredded cheese (Monterey Jack or Cheddar)
- store-bought queso (I like the Private Selection brand at Kroger/Fred Meyer)
- BBQ sauce (can be store-bought or homemade. I like Kinder's brand.)
- fresh cilantro, for topping
Instructions
Hash Brown Patties
- Start by making up the hash brown patties. Cook in the air fryer (or oven) according to the package instructions. Once done cooking, keep on the "keep warm" setting of your oven or air fryer to keep them warm until ready to serve.While these are cooking, you can prep your other ingredients.
Sausage Links
- In a large sauté pan over medium heat, place all the sausage links and cover to cook until one side is golden brown (3-4 minutes).Then, using tongs, flip the sausage links over and cook on the other side until browned.
- Once cooked through and golden brown on each side, cover to keep warm until ready to assemble your burritos.
Scrambled Eggs
- While the sausage is browning, you can make the scrambled eggs. In a medium-sized mixing bowl, whisk all of the eggs with the cream and salt.
- In a large sauté pan over medium heat, add 1 tablespoon of butter and swirl to coat bottom of the pan as it heats.
- Once butter is coating pan, pour in scrambled egg mixture. Use a rubber spatula to continuously stir the eggs. I like to use a motion that pulls inward from the edges. Make sure to keep them moving so they don't get overcooked.
- Keep stirring them until cooked to your liking, then remove from pan and place in a serving dish covered with aluminum foil to keep warm until ready to assemble your burritos.
Refried Beans
- Place the whole can of beans into a microwave safe serving bowl and pour in the cream and garlic salt. Mix until well combined.
- Microwave for 2-3 minutes until beans are steaming and warmed through. Cover with aluminum foil to keep warm and set aside.
Assembly of Burritos
- I like to begin by placing shredded cheese on each tortilla, then warming them in either a skillet pan or in the microwave.
- Next, warm up your queso (either in the microwave or stovetop), according to package instructions.
- Once each tortilla with cheese is warmed, layer on refried beans, then a hash brown patty, then eggs, then sausage, and top with a drizzle of queso, and then BBQ sauce. Garnish with fresh cilantro. Wrap up your burrito and enjoy!
- (These breakfast burritos are a great make-ahead meal. You can assemble up some extra, wrap in aluminum foil, and store in the fridge or freezer. Once ready to eat, just unwrap them and either microwave or cook up on a skillet pan.)
