While the sausage is browning, you can make the scrambled eggs. In a medium-sized mixing bowl, whisk all of the eggs with the cream and salt.
In a large sauté pan over medium heat, add 1 tablespoon of butter and swirl to coat bottom of the pan as it heats.
Once butter is coating pan, pour in scrambled egg mixture. Use a rubber spatula to continuously stir the eggs. I like to use a motion that pulls inward from the edges. Make sure to keep them moving so they don't get overcooked.
Keep stirring them until cooked to your liking, then remove from pan and place in a serving dish covered with aluminum foil to keep warm until ready to assemble your burritos.
