This Chopped Chinese Chicken Salad is a crowd pleaser! Everyone loves it – fresh, bright, sweet, & savory. It will be your new favorite meal. It is filled with rotisserie chicken, almonds, mandarin oranges, green onions, carrots, and crunchy ramen noodles, and topped with the most delicious sweet orange sesame dressing. Even people that don’t like salad will love this salad. My kids even like it, and they don’t usually like salad. You can have it as a side dish, but it’s so good you’ll probably want it as a main dish. It is the perfect salad to bring to a get-together.

When I was in high school (20 years ago), my best friend’s mom made this Chopped Chinese Chicken Salad for us for a long road trip. Our basketball team rode on a coach bus 3 hours away for a game. She made us a big container of this delicious salad it and we scarfed it down. I immediately asked her for the recipe when we got home and I’ve been making it since! I think it was the first time in my life I realized, wow I really love salad. It helped me see that salad doesn’t just have to be some bland scraps of iceberg lettuce with ranch. This Chopped Chinese Chicken Salad has texture and brightness, it is savory and sweet, and is so filling and satisfying as a meal.

Chopped Chinese Chicken Salad

This Chopped Chinese Chicken Salad is a crowd pleaser! Everyone loves it – fresh, bright, sweet, & savory. It will be your new favorite meal.

Ingredients

  • 1 head green cabbage, chopped thin
  • 1 head romaine lettuce, chopped
  • 1 rotisserie chicken, meat shredded
  • 1 cup diced carrots
  • 1/2 cup sliced almonds (I buy these pre-sliced but you can chop your own as well)
  • 1 bunch green onions, diced
  • 1 cup mandarin oranges (be sure to buy the mandarin oranges in juice, not in syrup – you will use some of the juice in the dressing)
  • 2 packages ramen noodles, crushed

Sesame Dressing

  • 1 tablespoon sesame oil
  • 1/2 cup olive oil
  • 1/2 cup rice vinegar
  • 1/3 cup sugar
  • 1/3 cup mandarin orange juice

Instructions

Salad

  • This salad starts off pretty big before the dressing goes on, so use a very large bowl. Once it's all mixed it will come down a bit, but it's a giant salad. Trust me though, you'll want it big! It saves well and tastes great leftover. However, you can halve the recipe if you need to.
  • In a very large bowl, combine the chopped cabbage, chopped romaine, shredded chicken, diced carrots and green onions, and sliced almonds,
  • Top with the crushed ramen noodles.
  • Separately, mix all the dressing ingredients in a small bowl or in a jar with a lid. Whisk or shake to mix. Mix until it's full incorporated and the sugar has dissolved into the dressing.
  • Pour the dressing over the salad and mix well, to be sure all the ingredients come together.
  • Serve immediately. Enjoy!
  • Storage: This salad stores great in an airtight container in the fridge. You can even add more lettuce the next day to keep it going a little longer.

I love Chinese Chicken Salad and it’s so nice to have the option to make it at home, and not only get it at restaurants when you’re out. The key to this is the homemade dressing. This dressing is light and sweet. Whenever we make this for friends or a dinner get together it gets eaten super quickly. Just try it this week—you will love it!

    I like the addition of the mandarin juice in the dressing to pull the whole thing together. Great mix of textures!
