S’mores Cookie Bars
Well, there goes all my healthy food aspirations. These S’mores Cookie Bars are insane. The graham cracker cookie part of the bar is so soft and has graham cracker crumbs in the dough, so it’s like getting the softest, buttery-est graham cracker you’ve ever had. Along with a heap of marshmallow creme, and some big melty chocolate chips, these S’mores Cookie Bars will be a big hit for you and your family (& friends).
This S’mores Cookie Bar recipe fills an 8×8″ or 9×9″ pan, but I’m sure you could double it and cook it a little longer to fill a 9×13″ pan. Once the cookie edges turn a light brown color and start to pull away from the edge, they’re done.

S'mores Cookie Bars
Ingredients
- 1/2 c. butter, softened
- 2/3 c. brown sugar (light)
- 1 tsp. vanilla extract
- 1 egg
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 1 c. flour
- 3/4 c. fine graham cracker crumbs
- 1 c. marshmallow creme (heaping cup)
- 1 c. chocolate chips (you can use semi-sweet, milk, or a mixture)
Instructions

Preheat oven to 350. Line an 8x8" or 9x9" baking dish with parchment paper, or foil.

Mix together butter and sugar with egg and vanilla. Mix in flour, baking soda, salt, and graham cracker crumbs until cookie dough comes together.

Use 3/4 of the dough and press into the bottom of the baking dish. Spread marshmallow creme over pressed cookie dough. (Be sure to spray the spatula with some cooking spray so the marshmallow creme doesn't stick.)

Sprinkle the chocolate chips over the creme, then press the remaining cookie dough over. Use a spoon to drop the dough in dollops on top of the chocolate chips, then press in with hands or spatula.

Bake for 18-20 minutes. Let cool before cutting. Enjoy!
