This Rotisserie Chicken Sandwich with Herb Aioli & Sweet Onion Jam is insane – with lemony herb sauce, sweet onion jam, & mascarpone cheese!
I’m trying to find the words to describe this sandwich. (And you know how much I love sandwiches!) As I was testing out the flavors of each element, they all tasted great individually, but when put together on a sandwich they hit every flavor profile. The lemon herb aioli is bright and tart, the rotisserie chicken is salty and savory, the onion jam is sweet and deep, and the mascarpone is a smooth creamy balance to all the other flavors.
I recently saw a rotisserie chicken sandwich on a menu with lemon aioli. I started thinking up ways I could improve that sandwich. First off, I wanted to use ciabatta bread; it is thick enough to hold up to all the sauces and meat on this sandwich without getting soggy. And toasting the ciabatta ensures the inside stays soft while the outside is crisp. Next, I knew I wanted to create a sweet element on this sandwich. I love sweet onions but cooking onions down into a jam with sugar and vinegar intensifies the flavor a lot more than just browning or caramelizing them.
Next, I wanted a smooth flatter creamy profile on the bread to balance out the other sauces – mascarpone was the perfect creamy but not too intense flavor to be a background to these other elements. Topped with a little arugula and lots of rotisserie chicken, this sandwich is kind of life changing. I’d say one of the best sandwiches I’ve ever made! What is Herb Aioli?
The word Aioli comes from the meaning – garlic and oil. Typically Aioli is made with mayonnaise and garlic, and can have other combinations of flavor. This Herby Aioli is the perfect cross between a mayo and a ranch. Because it’s packed with herbs (parsley, dill, chives) – it has that deeper savory flavor of ranch, but the garlic and lemon keep it light and bright. It’s the perfect complement to this sandwich. Rotisserie Chicken Sandwich with Herb Aioli & Sweet Onion Jam
Ingredients
Sweet Onion Jam
- 3 tablespoons butter, unsalted
- 2 large red onions, sliced thin
- 1 cup water
- 1/2 teaspoon salt
- 1/4 cup brown sugar
- 1/4 cup red wine vinegar
- 1 tablespoon balsamic vinegar
Herb Aioli
- 3/4 cup mayonnaise
- 1/4 cup lemon juice, fresh squeezed
- 1 tablespoon lemon zest
- 1/2 teaspoon salt
- 2 tablespoons minced garlic
- 1/4 cup chopped chives (fresh)
- 1/4 cup chopped parsley (fresh)
- 1/4 cup chopped dill (fresh)
- 1 tablespoon sugar
Additional Sandwich Ingredients
- 1 rotisserie chicken, meat sliced off for sandwiches
- mascarpone cheese
- ciabatta bread
- arugula or greens of your choice
Instructions
Sweet Onion Jam
- Begin by making the onion jam, so you can chill it for about 1 hour before making the sandwiches (if you don't have that much time, you can also put it in the freezer for about 25 minutes, after completed, to cool it down).
- Start by placing the butter in a nonstick pot (medium sized) over medium heat.
- Melt butter, and then add in onions and salt. Toss to coat them in butter, for about 1 minute, to make sure they are all evenly coated.
- Cover and let cook for 5 minutes until onions start to slightly brown.
- Then add in 1 cup of water and mix well. Cover and let cook for 15-20 more minutes, until onions have cooked down and are extremely soft, and the mixture has thickened.
- Once cooked down, add in brown sugar, red wine vinegar, and balsamic vinegar. Mix well and keep mixing. Don't stop so the mixture doesn't burn. Keep mixing for about 5-6 minutes until the mixture is thickened and jam-like.
- Once thickened, remove from heat. Place into a glass or metal airtight container and place in fridge to chill for about 60 minutes.(This can also be made the day before and kept in the fridge overnight.)
Herb Aioli
- Whisk all ingredients together in a bowl – mix well and place in an airtight container to chill until you're ready to to make/serve the sandwiches.
Building the Sandwich
- Start by slicing and toasting the ciabatta bread lightly.
- Then, on the bottom piece of ciabatta, place a thick layer of the sweet onion jam.
- On the top piece of ciabatta, spread a thick layer of mascarpone.
- On top of the onion jam, add lots of the sliced rotisserie chicken. Then cover/slater with the herb aioli.
- Top with arugula or greens of your choice. I love to slide this sandwich down the middle before eating to get all the flavors in that first bite.Enjoy!!
