Fresh Peach Crumble

In the summer we eat as many peaches as we can. My kids love them! We make this peach crisp every summer and everyone loves it… Especially topped with vanilla ice cream. Once it melts over the cinnamon-y crumble and all those flavors come together with the fresh fruit – it’s like summer in your mouth.

To start the Fresh Peach Crumble, cut up and peel very ripe peaches. Toss with sugar, cornstarch, vanilla, and a little almond extract. The almond extract really makes the peach flavor pop. The crumble includes all the best oaty sugary buttery ingredients – sugar, butter, cinnamon, nutmeg, oats. Be sure to serve warm with vanilla ice cream or whipped cream.

Fresh Peach Crumble


Peach Filling

  • 10-12 fresh peaches, ripe, peeled & sliced
  • 2 tbsp. cornstarch
  • 1/2 c. sugar
  • 1/4 cup brown sugar
  • 1 tsp. vanilla extract
  • 1/4 tsp. almond extract

Oat Crumble

  • 2 c. old fashioned oats
  • 1 c. brown sugar
  • 2/3 c. flour
  • 2 tsp. ground cinnamon
  • 1/2 tsp. nutmeg
  • 1/4 tsp. salt
  • 1 c. unsalted butter, melted (one stick)


  • Preheat oven to 350 degrees. Toss fresh peach slices with sugars, cornstarch, and extracts. Toss to coat.
  • Pour peaches into an 9×13 inch baking dish.
  • In a separate bowl, mix all oat crumble ingredients except butter. 
  • Once ingredients are tossed together, mix in butter. Continue mixing until small bits of butter are mixed throughout crumble.
  • Sprinkle crumble over oats.
  • Bake at 350°F for 50-60 minutes, until the fruit filling is bubbling and the topping is nicely browned. Let rest for 10 minutes before serving. 
  • Serve with vanilla ice cream or whipped cream!
