Chipotle Copycat Guacamole

I used to think I could just throw together some ingredients when it comes to guacamole, and have it turn out well. A couple years ago, I wanted a more consistent recipe and looked up a Chipotle Copycat Guacamole. I found a copycat version of it on PopSugar with their Chipotle collab here. Let me tell you it is really so GOOD. Like best tableside guac you ever get at a restaurant. Tons of flavor but still simple.

Since I first made this Chipotle Copycat Guacamole 5 years ago, it’s been my go-to guac. I bring it to parties and get-togethers and it disappears. I use it when we make tacos or salads.

Next time you need some guac, try this Chipotle Copycat Guacamole (and make lots ; ) I was a little skeptical of the lemon juice, but trust me it’s delicious.

If you don’t have lemon and lime juice, just use lime. And make sure it’s fresh squeezed!

Chipotle Copycat Guacamole

Ingredients

  • 3 large avocados
  • 1/8 c. fresh squeezed citrus juice (lime + lemon combined)
  • 1/2 c. cilantro, chopped very small
  • 1/2 red onion, diced very small
  • 1/2 jalapeno, diced very small (remove seeds unless you want it spicy)
  • 1/2 tsp. salt (can add more as needed, to taste)

Instructions

  • Pour the citrus juice over the diced onions for about 5 minutes.
  • In a separate bowl, roughly mash the avocados with a fork (leave some chunks!), then add remaining ingredients, including onions and citrus juice, and mix lightly. If needed, add more salt to taste.
  • Serve immediately. Enjoy! (To store, keep airtight, and sprinkle with some additional fresh lime juice on top to keep from browning.)
