The salad you need on your menu this week🍑🌿

I’ve been making this grilled peach & burrata salad for a couple years now and it’s still one of my all time favorites.

Burrata is a ball of thick fresh mozzarella with shredded fresh mozzarella and cream inside – it is soft and will slightly ooze out when you cut into it. Think of it as the creamiest mozzarella you’ve ever had.

Grilling the peaches gets them slightly soft and so so sweet – combined with the salty bacon, creamy burrata, and sweet pecans, this salad is so flavorful it’s going to become one of your new favorites.

A couple weeks ago I made a bunch of these swig copycat sugar cookies for the young women at church… They are my all-time favorite homemade sugar cookie!

I also love that you can make a bunch and freeze them and then they are super easy to transport and serve.

Have you tried @criobru yet?? ✋If not you really need to - Crio is brewed cacao beans - you brew it like coffee but it’s coffee free and has tons of health benefits.

I started drinking it regularly a couple months ago and I can’t tell you how much I love it! It’s delicious hot or cold (so good iced!) with a little creamer & stevia.

Have you ever tried Chia seed pudding?

It is another one of my favorite gut friendly breakfasts and so delicious and satisfying. You just need to make it a day or two beforehand to bring the ingredients together and let them chill in the fridge. Simple and packed with nutrients!

Here’s what you need:
• 1 cup almond milk (unsweetened)
• 1/4 cup chia seeds
• 2 teaspoons honey or real maple syrup
• berries for topping

Mix all ingredients except berries in an airtight jar and place in the fridge for 24 hours (or up to a week). When ready to serve, pour into a bowl and top with berries. I love how thick and creamy it is. And simple!

Chia seeds are packed with protein and omega-3’s which are great for gut and brain health. Raspberries are amazing for digestion, gut health, and are full of antioxidants - it’s said just a handful of fresh berries a day can fight off disease. Berries are super foods! 🍓🫐🍒
