Ingredients
1log (6-10 oz.)salami(I like dry salami - can also use peppered or Genoa)
1 log (6-10 oz.)pepperoni
1 jar (8-10 oz.)Kalamata olives (pitted)
1jar (8-10 oz.)green olives (pitted)
1block (6-8 oz.)aged cheddar (or other sharp cheese)
1 container (8 oz.)tiny mozzarella pearls (if you can’t find these, you can also use a log of fresh mozzarella and cube it up)
1/2cupPepperonicini, chopped
extra virgin olive oil(for drizzling)
balsamic vinegar (for drizzling)
black pepper (to taste)
Instructions
Chop all ingredients into small pieces (about 1/4 inch in size). They should all be similar in size, except the pepperoncini which can be smaller.
Add all chopped ingredients in a bowl. If serving immediately, toss generously with olive oil and balsamic vinegar. Add black pepper to taste and serve with toasted baguettes, or crackers, or pita chips.
If you will be serving later, chill all of the ingredients in an airtight container.Once you are ready to eat/serve, toss generously with the olive oil and balsamic vinegar. Add black pepper to taste.
You can store this in the fridge, but if you get out to serve it again, toss again with a little more olive oil and balsamic vinegar.Enjoy!
