America's Test Kitchen Greek Layer Dip is layered with hummus, tzatziki, and a delicious mix of veggies and feta on top. Serve it with soft mini naan or pita bites, or any kind of salty chip or cracker. This is an appetizer that always disappears quickly at gatherings! (Note: this recipe is made easy with store bought tzatziki, but if you'd like to make it homemade, you can use my recipe here.).

1(8 oz.)container tzatziki (store bought)
1½cupsEnglish cucumbers, chopped small
1cupjarred roasted red peppers (patted dry and chopped small)
1/2cuppitted kalamata olives, chopped
4green onions, chopped small
2tablespoonsfresh mint, chopped finely
1/4teaspoonsalt
1/4teaspoonblack pepper
2 tablespoonsolive oil
1/2cupcrumbled feta cheese

Chopped Veggie and Herb Mixture
I like to start this recipe by preparing the chopped veggie mixture and letting it chill, until I'm just about to serve the dip. This works great if you are hosting or waiting until later in the day to serve the dip - just prep this veggie mixture earlier in the day - and chill it until just before serving.
Start by dicing your cucumbers, kalamata olives, roasted red peppers, green onions, and mint leaves.
Combine cucumber, red peppers, olives, scallions, oil, mint, salt, and pepper in bowl. Mix gently and chill in an airtight container until ready to serve.
Assembly of the Dip
Spread hummus in single layer on large, shallow serving platter.
Next, carefully spread tzatziki in even layer over hummus (being careful to not mix the layers).
Spoon vegetable mixture in even layer over yogurt.
Sprinkle with feta (and extra chopped mint, if desired). Serve the dip with soft mini naan bites, pita chips, sliced vegetables, or any type of cracker you like.
