This easy Banana Snack Cake bakes more evenly than banana bread and is the perfect mix of a sweet bread and cake – you’ll love it!

I love to make Cake and I love to make Banana Bread – but this Banana Snack Cake is the perfect mix of both. So easy to make, so light and fluffy, and filled with banana flavor.

You know I love my doctored-up cake mixes around here – this is a variation of our regular doctored-up sour cream + pudding + cake mix favorite.

Start with a yellow cake mix, add a dry banana pudding packet, plus sour cream, eggs, sugar, water, and some mashed bananas – bake in a 9×13″ pan and you’ve got a perfect Banana Snack Cake.
Banana Snack Cake
Ingredients
- 1 box yellow cake mix (just the dry cake mix)
- 1 box ( 4oz.) banana pudding pack (dry)
- 1/2 cup sugar
- 1/2 cup water
- 1/2 cup sour cream (or greek yogurt)
- 3 eggs
- 3 bananas, mashed
Instructions
- Preheat oven to 350°F.
- Line a 9×13" pan with parchment paper and spray with nonstick cooking spray. Set aside.
- In a large bowl, combine cake mix, pudding pack, sugar, water, eggs, and sour cream. Mix until well combined.
- Mash bananas very well, until pureed. (Big banana chunks keep the cake from being as light.)
- Add mashed bananas and fold in with a large spoon, until well incorporated.
- Pour cake batter into prepared pan. Bake for 45-50 minutes until cake springs back to the touch in the center. Bananas are heavy in a cake so if you're unsure to whether it's done, bake it for 5 extra minutes. Hard to overbake this with all the banana and eggs.
- Remove from oven and let cool for 15-20 minutes before cutting.
- Cut into squares. Serve and enjoy!
