Honey Balsamic Meatloaf

This Honey Balsamic Meatloaf makes several individual meatloaves filled with flavor and fresh herbs, smothered with a sweet honey balsamic glaze.



  • 2 lbs. ground beef
  • 1/4 c. fresh parsley, chopped fine
  • 1/2 onion, grated (yellow or white)
  • 1 cup panko bread crumbs
  • 4 cloves garlic, minced
  • teaspoons garlic salt

Honey Basamic Glaze

  • 1/2 cup ketchup
  • 3 tablespoons balsamic vinegar
  • 1 tablespoon honey


Honey Balsamic Glaze

  1. In a small bowl, whisk together ketchup, balsamic vinegar, and honey. Set aside.


  1. Spray a baking sheet with cooking spray or parchment paper and set aside. Preheat oven to 450°F.

  2. Combine meat with bread crumbs and herbs in a bowl. Mix well with hands until it is well incorporated.

  3. Form meat into oblong shape between hands, about as long as your hands and a couple inches tall. (see photo)

  4. Make 5-6 small loaves and place onto prepared baking sheet. Brush each loaf generously with the honey balsamic glaze.

  5. Bake for 15 minutes at first, then pull out of oven and brush each loaf with more balsamic glaze. Then bake for 10-15 more minutes, until meat is cooked through. (You can cut one in the center to double check it's cooked if you're not sure.)

  6. Once cooked, remove from oven and let rest for 5-10 minutes before eating. Serve with a side of veggies and/or potatoes, and enjoy!
