Honey Balsamic Meatloaf

This Honey Balsamic Meatloaf makes several individual meatloaves filled with flavor and fresh herbs, smothered with a sweet honey balsamic glaze.

Ingredients

Meatloaf

  • 2 lbs. ground beef
  • 1/4 c. fresh parsley, chopped fine
  • 1/2 onion, grated (yellow or white)
  • 1 cup panko bread crumbs
  • 4 cloves garlic, minced
  • teaspoons garlic salt

Honey Basamic Glaze

  • 1/2 cup ketchup
  • 3 tablespoons balsamic vinegar
  • 1 tablespoon honey

Instructions

Honey Balsamic Glaze

  • In a small bowl, whisk together ketchup, balsamic vinegar, and honey. Set aside.

Meatloaf

  • Spray a baking sheet with cooking spray or parchment paper and set aside. Preheat oven to 450°F.
  • Combine meat with bread crumbs and herbs in a bowl. Mix well with hands until it is well incorporated.
  • Form meat into oblong shape between hands, about as long as your hands and a couple inches tall. (see photo)
  • Make 5-6 small loaves and place onto prepared baking sheet. Brush each loaf generously with the honey balsamic glaze.
  • Bake for 15 minutes at first, then pull out of oven and brush each loaf with more balsamic glaze. Then bake for 10-15 more minutes, until meat is cooked through. (You can cut one in the center to double check it's cooked if you're not sure.)
  • Once cooked, remove from oven and let rest for 5-10 minutes before eating. Serve with a side of veggies and/or potatoes, and enjoy!
