Creamy Vanilla Icebox Cake

This Creamy Vanilla Icebox Cake is the easiest dessert you'll ever make! Layers of wafer cookies & whipped cream piled with fresh berries.

Ingredients

Vanilla Whipped Cream

  • 4 cups heavy whipping cream, chilled (1 quart)
  • 5 tablespoons white sugar
  • 1 teaspoon vanilla extract or paste

Ingredients for Cake

  • 1 box (family size - 15 oz) Nilla Wafers or other wafer cookies
  • 1-2 cups berries for topping

Instructions

  • Get out a cake stand or other cake pan you'd like to use for the cake. Set aside.
  • In a large metal bowl, pour the cold heavy whipping cream. Add the white sugar and let sit for 1 minute for sugar to dissolve. Then add vanilla.
  • Whip the cold whipping cream until stiff peaks form.
  • Spoon a large heap of whipped cream into bottom of the cake stand or cake pan. Spread evenly across bottom.
  • On top of cream layer, add Nilla Wafer cookies in a single layer (If you have a pan with edges, break them as needed to form to the shape of your pan - small gaps are okay.)
  • Repeat by adding another cream layer, then another layer of Nilla Wafers until you are out of cookies or have as many layers as you'd like. Finish the top with a thick layer of whipped cream.
  • Place in the fridge and chill for 6-8 hours (or overnight).
  • When ready to serve, top with fresh berries. Cut to serve and enjoy!
