Baked Ham and Gruyère Croissants with Maple Mustard - delicious ham and gruyere cheese baked with a maple mustard on a crisp baked croissant. Topped with some chives and dipped in more of the maple mustard, this is a delicious make-ahead brunch that everyone will love.
Recipe can easily be made in a smaller pan for a smaller group or in a large pan(s) for a big group. Plan on 1 croissant for 2 people (as they are cut in half).

Ingredients

Maple Mustard Dressing

  • 4 tablespoons whole grain mustard
  • 1/3 cup mayo
  • 2 tablespoons sour cream (or plain yogurt)
  • 2 tablespoons apple cider vinegar
  • 1/2 teaspoon garlic powder
  • 1/4 cup real maple syrup

Sandwich Ingredients

  • butter croissants (1 croissant for every 2 people)
  • sliced deli ham
  • Gruyère cheese, grated (about 1 oz. for every sandwich you plan to make)
  • fresh chives, chopped

Instructions

Maple Mustard Dressing

  • Start by making the maple mustard. This can be done up to a day or two ahead of time, or just as you're assembling the sandwiches.
  • Whisk the ingredients together and pour into an airtight container. Store in the fridge for up to a week.

Sandwich Assembly

  • Preheat the oven to 375°F.
  • Cut each croissant in half length-wise and width-wise.
  • Arrange the bottom half of each croissant piece in a rimmed baking dish. Slather (generously - trust!) the maple mustard dressing onto each piece of croissant.
  • Then layer each piece with ham and lots of shredded Gruyère.
  • Sprinkle lots of the fresh chives on each piece, then cover with the top piece of the croissant.
  • Cover the entire baking dish with aluminum foil and bake for 15 minutes covered.
  • Remove foil and then bake for an additional 2-4 minutes until cheese is bubbling and tops of croissants are lightly golden.
  • Serve with an additional garnish of chives, and a side of the maple mustard dressing, and dip in the dressing while eating, if desired.

  • (These sandwiches can be kept in the fridge in an airtight container for 2-3 days. They make great leftovers.)

Make-Ahead Instructions

  • To make this ahead, build the sandwiches and cover with foil (making sure the foil is sealed well so no air gets in - don't want the croissants to dry out).
  • Place in the fridge overnight for up to 24 hours.
  • When ready to bake, preheat oven to 350°F. Bake (covered) for 20-25 minutes until cheese is melted. Once melted, remove foil and bake uncovered for an additional 4-5 minutes until croissants are crispy and golden. Enjoy!
