Chopped Chinese Chicken Salad

This Chopped Chinese Chicken Salad is a crowd pleaser! Everyone loves it - fresh, bright, sweet, & savory. It will be your new favorite meal.

Ingredients

  • 1 head green cabbage, chopped thin
  • 1 head romaine lettuce, chopped
  • 1 rotisserie chicken, meat shredded
  • 1 cup diced carrots
  • 1/2 cup sliced almonds (I buy these pre-sliced but you can chop your own as well)
  • 1 bunch green onions, diced
  • 1 cup mandarin oranges (be sure to buy the mandarin oranges in juice, not in syrup - you will use some of the juice in the dressing)
  • 2 packages ramen noodles, crushed

Sesame Dressing

  • 1 tsp. sesame oil
  • 1/2 cup olive oil
  • 1/2 cup rice vinegar
  • 1/3 cup sugar
  • 1/3 cup mandarin orange juice

Instructions

Salad

  1. This salad starts off pretty big before the dressing goes on, so use a very large bowl. Once it's all mixed it will come down a bit, but it's a giant salad. Trust me though, you'll want it big! It saves well and tastes great leftover. However, you can halve the recipe if you need to.

  2. In a very large bowl, combine the chopped cabbage, chopped romaine, shredded chicken, diced carrots and green onions, and sliced almonds,

  3. Top with the crushed ramen noodles.

  4. Separately, mix all the dressing ingredients in a small bowl or in a jar with a lid. Whisk or shake to mix. Mix until it's full incorporated and the sugar has dissolved into the dressing.

  5. Pour the dressing over the salad and mix well, to be sure all the ingredients come together.

  6. Serve immediately. Enjoy!

  7. Storage: This salad stores great in an airtight container in the fridge. You can even add more lettuce the next day to keep it going a little longer.
