I like to make the slaw first and chill it while prepping the other ingredients. You can make the slaw early in the day and chill it, or make it just before you eat. Cabbage doesn't wilt easily so it will hold up well if you make it early.
In a medium-sized bowl combine shredded cabbage and shredded carrots.
In a separate small bowl, combine mayo, sugar, vinegar, salt, and lime juice. Whisk well to remove all clumps.
Once well-mixed, pour over cabbage and carrot mixture. Mix well until well coated. Cover and chill until ready to serve.
Place pork loin in the slow cooker and add water so it comes 2 inches up the side of the slow cooker.
Add garlic salt and minced garlic. Cook on high for 4-5 hours or low for 6-7 hours.
Once cooked, remove pork loin from slow cooker and shred with 2 forks.
Once shredded, add 1 cup of BBQ sauce, vinegar, and broth from slow cooker. Mix until well combined. Set aside.
To assemble, top each slider bun with a scoop of the BBQ pork, then top with Sweet Lime Slaw. If desired, also top with additional BBQ sauce and/or lime juice. Enjoy!
