Ingredients

  • ¾ c. butter (1.5 sticks)
  • c. Rice Krispies
  • ½ tsp. salt
  • 20 oz. mini marshmallows (2 bags)

optional

  • 1 c. butterscotch or white chocolate chips
  • sprinkles

Instructions

  • Spray a 9x13" pan with nonstick cooking spray or line with parchment paper. Set aside.
  • In a large bowl, combine Rice Krispies, salt (and add butterscotch chips here if using). Set aside.
  • Browning Butter: In a large heavy bottom pot, add butter. Over a medium heat stir butter with a spatula as it melts and then browns. It will take a couple minutes for it to brown - you'll see the little brown bits of milk solids form. That is normal! Just keep stirring until they are golden brown and it smells fragrant and nutty. Don't let it burn. Once butter has browned and smells nutty, remove from heat.
  • Add in marshmallows and stir until melted. (I reserve a handful of marshmallows to add in at the end, so there are some larger gooey pieces in there.)
  • Once marshmallows have melted, pour in cereal/salt/chip mixture. Stir well and quickly, until the Rice Krispies are evenly coated.
  • At this point add in the additional handful of marshmallows if you'd like, and a couple teaspoons of sprinkles (if you'd like). Mix gently to incorporate.
  • Spread into 9x13" pan, pressing mixture down to fit the shape of the pan. Allow to set and cool a bit - room temp is best - before cutting. Enjoy!
