Citrus Asian Chicken Salad

Ingredients

Citrus Sesame Ginger Dressing

  • 1/2 c. mandarin orange juice (reserved from oranges)
  • 1/2 c. olive oil
  • 1/3 c. rice vinegar
  • 1 tsp. sesame oil
  • 1 tsp. grated fresh ginger
  • 1 tsp. minced garlic
  • 1/3 c. green onions, finely chopped
  • 2 tbsp. sugar

Salad Ingredients

  • rotisserie chicken breast, chopped or shredded (or you can cook up 1 chicken breast with garlic and a little brown sugar)
  • romaine lettuce, chopped
  • baby spinach
  • mandarin oranges, drained, with juice reserved
  • snow peas, end trimmed
  • red pepper, sliced thin
  • sliced cucumber
  • wonton strips (usually available in the produce section)
  • black sesame seeds
  • salt and pepper to taste

Instructions

Citrus Sesame Ginger Dressing

  • Whisk all ingredients in a small bowl, or combine in a mason jar and shake well before serving. 
  • You can also make in advance and chill until ready to serve.
  • Store in the fridge in an airtight container. Be sure to shake well or mix before serving.

Assembling Salad

  • Adjust amount of salad ingredients depending on how many people you're making the salad for. 
  • I love to buy a rotisserie chicken to make this salad - it's so easy and comes together in 5 minutes that way. However, if you don't have one on hand you can easily roast a couple chicken breasts in the oven with some olive oil, salt, and garlic. Slice or shred once cooked.
  • Build salad by layering spinach and lettuce in a bowl. Then add chopped ingredients and chicken. Add wonton strips and black sesame seeds last.
  • Mix dressing well and slather it on this salad - it's delicious. Enjoy!
