Fresh Peach Crumble

Ingredients

Peach Filling

  • 10-12 fresh peaches, ripe, peeled & sliced
  • 2 tbsp. cornstarch
  • 1/2 c. sugar
  • 1/4 cup brown sugar
  • 1 tsp. vanilla extract
  • 1/4 tsp. almond extract

Oat Crumble

  • 2 c. old fashioned oats
  • 1 c. brown sugar
  • 2/3 c. flour
  • 2 tsp. ground cinnamon
  • 1/2 tsp. nutmeg
  • 1/4 tsp. salt
  • 1 c. unsalted butter, melted (one stick)

Instructions

  • Preheat oven to 350 degrees. Toss fresh peach slices with sugars, cornstarch, and extracts. Toss to coat.
  • Pour peaches into an 9x13 inch baking dish.
  • In a separate bowl, mix all oat crumble ingredients except butter. 
  • Once ingredients are tossed together, mix in butter. Continue mixing until small bits of butter are mixed throughout crumble.
  • Sprinkle crumble over oats.
  • Bake at 350°F for 50-60 minutes, until the fruit filling is bubbling and the topping is nicely browned. Let rest for 10 minutes before serving. 
  • Serve with vanilla ice cream or whipped cream!
