Preheat oven to 350 degrees. Toss fresh peach slices with sugars, cornstarch, and extracts. Toss to coat.
Pour peaches into an 9x13 inch baking dish.
In a separate bowl, mix all oat crumble ingredients except butter.
Once ingredients are tossed together, mix in butter. Continue mixing until small bits of butter are mixed throughout crumble.
Sprinkle crumble over oats.
Bake at 350°F for 50-60 minutes, until the fruit filling is bubbling and the topping is nicely browned. Let rest for 10 minutes before serving.
Serve with vanilla ice cream or whipped cream!
