Slow Cooker Mashed Potatoes

Ingredients

  • 2 lb potatoes, quartered rinsed and scrubbed before quartering
  • 1 tsp Italian seasoning
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp garlic powder (or head of roasted garlic)
  • 1/2 c chicken broth
  • 1/2 c butter
  • 1/3 c cream (or milk)

Instructions

  • Spray the inside of a 6 quart slow cooker with cooking spray.
    Add the potatoes, seasonings, roasted garlic, and chicken broth.
    Cook on low for 3 hours or on high for 1 - 1 1/2 hours.
    Place potatoes in a stand mixer or use a hand mixer to blend.
    Add the butter and cream/milk slowly, a little at a time. You may need additional cream to get the consistency of the potatoes you prefer.
    Add more seasonings, esp. salt to taste.
    Can keep warm in the slow cooker until ready to serve.
