Combine marinade ingredients in slow cooker. Add chicken and coat. Cook on low for 4-5 hours (or high for 2-3 hours).
Before chicken is done, begin prepping other ingredients. Cook rice, sautee peppers, and wash lettuce.
Mash avocados with salt and lime juice to taste.Remove chicken from crock pot and chop or shred.
Assemble bowls with lettuce or spinach, bell peppers, rice, chicken, guac, and sour cream or salsa to taste. Drizzle some of the marinade sauce over the top (it's so good!), and enjoy!
