Easy Lucky Charms Cookies

Easy Lucky Charms Cookies -a sweet cookie dough base filled with Lucky Charms Cereal- the crunchy oat pieces & marshmallows. Sweet & crunchy!

Ingredients

  • 3/4 cup unsalted butter, softened
  • 3/4 cup white sugar
  • 1/2 cup brown sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 cups white flour
  • 3/4 teaspoon salt
  • 3/4 teaspoon baking soda
  • 3 cups Lucky Charms Cereal
  • 1 cup Lucky Charms marshmallows

Instructions

  • Preheat the oven to 350°F.
  • In a stand mixer fitted with the paddle attachment, add the softened butter and sugars.
    Cream well until fluffy and incorporated.
  • Next add in the eggs and vanilla. Mix again until well combined.
  • Combine the flour, salt, and baking soda and mix well.
  • Add the combined dry ingredients to the wet and mix until combined.
  • Next,, add in the Lucky Charms Cereal. Mix in stand mixer until well combined (you will be adding additional Lucky Charms marshmallows part way through baking so it doesn't matter if the pieces of cereal in the dough crack - they will taste great well distributed.)
    But if you'd like to keep the pieces whole you can mix in the cereal by hand.
  • Scoop dough onto a parchment-lined cookie sheet and freeze for 15 minutes.
  • Once frozen, transfer 6-9 balls of cookie dough onto another parchment-lined cookie sheet and bake for 6 minutes.
  • After 6 minutes, remove from oven, and slightly press down rounded tops of cookies with the back of a small spatula.
    Then add the additional Lucky Charms marshmallows on top, placing several on top of each cookie.
  • Return to oven for 2 more minutes. This will allow marshmallows to bake and puff slightly without burning.
  • Remove from oven and let cookies rest for 5-10 minutes on cookie sheet.
