Cinnamon Blackberry Crumb Bars

These Cinnamon Blackberry Crumb Bars are filled with gooey sweet blackberries and loads of cinnamon crumble topping. Really easy + really good

Ingredients

Base & Crumb Mixture

  • 3 cups all purpose flour
  • 1/3 cup brown sugar
  • 1 cup white sugar
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1 cup unsalted butter, melted (2 sticks)
  • 1 egg, beaten

Blackberry Filling

  • 5 cups Oregon blackberries
  • 1/4 cup fresh lemon juice
  • 2 tablespoons cornstarch
  • 1 cup white sugar

Instructions

  • Preheat oven to 350 degrees F.
    Prepare a 9”x13” pan. Line the pan with parchment paper and spray with nonstick cooking spray.
  • Start by preparing the berry mixture. In a large bowl combine blackberries, sugar, cornstarch, and lemon juice. Mix well and set aside to let sugar work into berries.
  • In a separate mixing bowl combine flour, white sugar, brown sugar, cinnamon, nutmeg, salt, and baking powder. Mix until well combined.
  • Slowly add melted butter and mix with a fork to incorporate. Then add in beaten egg and mix to incorporate.
  • Press ⅔ of the crumb mixture into the bottom of the prepared pan. Then pour the blackberry mixture over the top (include any juices in the bottom of the bowl). Spread the berries evenly over the pan, then top with remaining ⅓ of crumb mixture.
  • Place into preheated oven and bake for 50-60 minutes until berries are bubbling and thickened. (If the top starts getting too browned before the berries are bubbling, you can place a sheet of aluminum foil over the top until it finishes baking).
  • Once berries are bubbling all over (including the center) and look thickened, remove from the oven. Let them rest for a little before serving, about 30-40 minutes to set. You can also chill before serving.
    Cut into squares and serve. Enjoy!
