Watermelon Feta Salad
This Watermelon Feta Salad is fresh and light - perfect for summer. Cubed watermelon, blueberries, feta, basil, and a honey lime drizzle.
- 1/2 watermelon, cubed into bite-sized pieces (I think the watermelon tastes best chilled - refrigerate the watermelon before cutting)
- 1½-2 cups fresh blueberries
- 1/4 cup feta cheese, crumbled
- 2 tablespoons basil, chopped
- 3 limes juiced
- 3 tablespoons honey
Start by making the honey lime drizzle. Whisk together the lime juice and honey in a small bowl. Set aside.
In a large serving bowl, mix together the watermelon, blueberries, and basil.
Top with the honey lime drizzle and mix well. Then add the crumbled feta on top. Serve chilled. Enjoy!
