Cadbury Mini Eggs Speckled Easter Cake

Recipe makes a 2 layer cake or a 3 layer with small layers. Double this recipe if you want a 4 layer cake as shown here.

Ingredients

Spice Cake

  • 1 box spice cake mix
  • 1 4oz instant vanilla pudding pack (dry) (the powdered kind)
  • 1/2 c. sugar
  • 3/4 c. oil
  • 3/4 c. water
  • 4 eggs
  • 1 8 oz. container of sour cream (1 cup)

Buttercream Frosting

  • 1 stick (1/2 c.) unsalted butter, softened
  • 1 2 lb. bag powdered sugar (7.5 - 8 c.)
  • 5-8 tbsp. milk
  • 1 tsp. vanilla extract
  • 1/2 tsp. almond extract (optional)
  • blue food coloring (or other color you desire)

For Cake Topping

  • Cadbury mini eggs
  • 1 tbsp. cocoa powder, mixed with a tiny trickle of water
  • basting brush or clean paintbrush (for getting brown flecks onto cake)

Instructions

Cake

  • Grease cake tins very well with cooking spray. Mix all ingredients before eggs. Then beat in one egg at a time. Then add sour cream.
  • To measure out your batter for each pan, use this guide:
    - 3 layer cake: 1.9 cups of batter per pan
    - 2 layer cake: 2.8 cups of batter per pan
    Here's how to bake depending on how many layers you're making:
    - 2 layers (8/9 inch layer pans): 30-35 minutes at 350 degrees
    - 3 layers (8/9 inch layer pans): 23-25 minutes at 340 degrees
    - bundt cake: 50 - 55 minutes at 350 degrees
  • Before frosting, freeze each layer of cake to keep it clean from crumbs while frosting. 

Vanilla Buttercream Frosting

  • Beat butter in a stand mixer with paddle attachment until softened and smooth.
  • Add in 1 c. of powdered sugar, then a tiny but of milk, beat on high until smooth. Continue this process until all the powdered sugar is incorporated and frosting is smooth. Add vanilla extract (and almond extract) and mix until smooth.
  • Slowly add 1-2 drops of blue food coloring. Mix until you get the desired color you'd like. Mix well.
    If the mixture is too stiff for your liking, you can add a little more milk. If it's a little too thin, you can add a little more powdered sugar.
    A thicker buttercream will make a layer cake more stable. However if you're making a bundt cake you might want it thinner to drizzle over the top. 

Assembling Cake

  • Place a small dollop of frosting on the cake platter or plate before putting the first layer down. This will stick the cake to the plate.
  • Add the first layer then frost the top of it, then add the remaining layers and frost. Thinly crumb coat the edges and top, then return to the freezer for about 20 minutes to set the frosting.
  • Once the frosting has set, finish the sides and top with either swooping motions for a creamy look, or use a cake edge to get a straight side.
  • Once the exterior frosting is to your liking, mix the 1 tbsp. of cocoa powder with a tiny trickle of water. Lightly dip your basting brush (or clean paintbrush) in the mixture and then flick the brown mixture lightly all over the cake. Repeat until it's as speckled as you'd like it. 
  • Top with Cadbury Mini Eggs and enjoy!
