Teriyaki Shrimp Stir Fry with Cauliflower Rice

Ingredients

  • 13-14 small shrimp (already peeled, tail-off, and deveined is easiest)
  • 2 c riced cauliflower (if you can't find it pre "riced" you can make it yourself in food processor)
  • 2 c frozen Asian vegetable stir fry
  • 1/2 yellow onion, diced
  • 1/2 c water
  • 1 tbsp teriyaki sauce (we love Soy Vay)
  • sesame seeds for garnish
  • garlic salt

Instructions

  • Heat a large sautee pan to medium high heat. Add onions and 1/2 c. of water. Cover and let steam until onions are soft.
  • Once onions are soft, add cauliflower rice and sprinkle with garlic salt. Cover and let cook until cauliflower is soft.  Add Asian veggie stir fry and heat until veggies are cooked through. Remove from pan to plate.
  • Add shrimp to pan and sear shrimp, sprinkling with garlic salt.  Remove from pan once cooked through and add to plate.
  • Once veggies and shrimp are plated, drizzle dish with teriyaki sauce and sesame seeds. Enjoy!
