S’mores Cookie Bars

These S’mores Cookie Bars are gooey, chocolatey, and filled with soft graham cracker cookie and tons of fluffy marshmallow cream. They are a great treat to make when you’re looking to an alternative to a basic cookie.

Well, there goes all my healthy food aspirations. These S’mores Cookie Bars are insane (and you know we love cookies in our house.) We have been making these for years and they are always a hit. The graham cracker cookie part of the bar is so soft and has graham cracker crumbs in the dough, so it’s like getting the softest, buttery-est graham cracker you’ve ever had. Along with a heap of marshmallow cream, and some big melty chocolate chips, these S’mores Cookie Bars will be a big hit for you and your family (& friends).

The best part about these is the are made in one large pan – so you don’t have to make any batches. Just throw them in the oven and let them bake. They are also easy to transport to events or get-togethers.

This S’mores Cookie Bar recipe fills a 9×13″ pan (but if you want a smaller amount you can half the recipe and it will fill an 8×8″ pan). Once the cookie edges turn a golden brown color and start to pull away from the edge, they’re done.

These S'mores Cookie Bars are gooey, chocolatey, and filled with soft graham cracker cookie and tons of fluffy marshmallow cream.
This recipe fills a 9×13" pan (but if you want a smaller amount you can half the recipe and it will fill an 8×8" pan). Depending on how you cut them you can get 12 extra large bars or 24 small bars.

Ingredients

  • 1 cup unsalted butter, softened (2 sticks)
  • 1⅓ cup brown sugar (light)
  • 2 teaspoons vanilla extract
  • 2 eggs
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups flour
  • 2 cups fine graham cracker crumbs
  • 14 oz. marshmallow creme (2 jars)
  • cups chocolate chips (I like semi-sweet to offset the sweetness of the marshmallow, but you can use any kind you like)

Instructions

  • Preheat oven to 350°F. Line a 9×13" baking dish with parchment paper, and spray well with nonstick cooking spray.
  • Mix together butter and brown sugar with eggs and vanilla, in a stand mixer with the paddle attachment (or with a handheld mixer).
  • Once combined, add in flour, baking soda, salt, and graham cracker crumbs. Mix until cookie dough comes together.
  • Use 3/4 of the dough and press into the bottom of the baking dish. Spread marshmallow cream over pressed cookie dough. (Be sure to spray the spatula with some cooking spray so the marshmallow cream doesn't stick.)
  • Sprinkle the chocolate chips over the cream, then drop pieces of the remaining cookie dough over. You can drop the dough in dollops on top of the chocolate chips, so it doesn't squeeze out the marshmallow cream.
  • Bake for 22-24 minutes. Once the cookie edges turn a golden brown color and start to pull away from the edge, they're done.
    Let cool and set before cutting. Enjoy!
