No Pasta Cauliflower Mac N Cheese – I’ve seen lots of recipes lately for cauliflower mac n cheese. I was skeptical—how could a mac n cheese without pasta be good?? Well I loved this. I have to say though you can’t expect it to taste just like pasta, but it is still delicious.
The mustard in the cheese sauce really made it for me, however some people have reported they didn’t love it. (Some had used ground mustard.) If you want a little more depth to your cheese flavor (think cheese fondue, a sharper cheese), then add the mustard. If you want plain old cheesy goodness, omit. Hope you enjoy this! No Pasta Cauliflower Mac N Cheese
- 1 head cauliflower
- 5 tbsp cream cheese
- 1 tbsp. mustard Optional - not ground mustard
- 2 c. cheese 1/2 c. reserved for top
- 1/4 c. heavy cream or milk
- garlic powder
- salt and pepper to taste
Chop the heads off the cauliflower and steam until soft.
Once soft drain and return to saucepan. Using a firm spatula or wooden spoon, stir firmly through the cauliflower heads to break them up. You don't want them mashed but you want small pieces.
Add cream cheese, cheese and cream and stir until incorporated. Add mustard, garlic powder, and salt pepper to taste.
Add mixture to a baking dish, cover with remaining 1/2 c. cheese and broil until bubbly. Even my husband who loathes cauliflower loved this!
