Lightened Up BBQ Chicken Pizza

The hunt for healthy, low-calorie meals continues! I’ve been following the Fitness Carli food plan and it’s been helping me so much to control how much I eat – I love that it’s not an elimination diet. Typically my diets eliminate groups of food, like “no sugar” or “no gluten” and I’m left feeling completely restricted. Turns out if you tell yourself you can’t have something that’s all you want! So, this time around I’m trying a new approach. Her food plan is well balanced – a good mix of fruits, veggies, dairy, whole grains, and meat. There are a couple little sweets in there too which really save me from feeling too deprived. The cup of light yogurt with some chocolate chips on top is actually really good! One meal she recommends is a Lightened Up BBQ Chicken Pizza, made on a Flatout Tortilla, rather than a pizza crust. I was skeptical at first but it turned out delicious! I added some sauteed onions (sauteed in water so, no oil 😉 and some cilantro. I also used light cheese to keep the calories down. If you are craving pizza but want to cut back on calories, try this out!!

Lightened Up BBQ Chicken Pizza

Servings 1

Ingredients

  • 1 Flatout tortilla
  • 3 tbsp BBQ sauce (I love Stubb's but any lower calorie BBQ sauce works)
  • 1/2 c light shredded mozzarella cheese
  • 2 oz grilled chicken, chopped
  • 1/4 red onion, sliced thin
  • 1/2 c water
  • fresh cilantro, chopped

Instructions

  • Preheat oven to 400 degrees.
  • Meanwhile, heat a small sautee pan to medium high heat. Place red onions into pan. Add water and place a lid on top. Cook until soft. Set aside.
  • In a small bowl mix 1 tbsp. of the BBQ sauce with the chicken.
  • Assemble pizza by putting 2 tbsp. of BBQ sauce onto Flatout tortilla. Sprinkle with shredded cheese. Then add chicken and cooked red onions.
  • Cook in the oven at 400 for 5-8 minutes until cheese is melted. 
  • Remove from oven and top with chopped cilantro. Enjoy!

Notes

This recipe is made for 1 person, but can easily be multiplied for more.
