 Korean Beef Bulgogi Tacos with Fresh Salsa

This past year I’ve taken my family on a global eating adventure – attempting each week to make different types of global foods from around the world.

As I’ve worked to come up with new recipes, I’ve found out how delicious it is to take a common food and add a global twist. This week I partnered up with Fresh Cravings Salsa to add a global twist to common tacos. I’ve made some of my favorite meat – marinated and seared Korean beef Bulgogi, and paired it wish some Asian cabbage slaw and delicious Fresh Cravings Salsa – the country’s leading refrigerated salsa made with fresh ingredients, never cooked or pasteurized. Let me tell you – it has so much more flavor than those cooked, jarred salsas! It was the perfect addition to these fusion tacos.

After trying this you’ll never want to go back to shelf-stable salsa. Not only is this salsa used on top of the tacos, but it’s also in the meat marinade. So much flavor in this meal!

I’d never had a Korean beef taco before but decided that beef Bulgogi mixed with delicious fresh salsa, Asian slaw, and some soft tortillas would be amazing. It really has so much flavor! Please do yourself a favor and make sure you try these Korean Beef Bulgogi Tacos with Fresh Salsa this week. Your family will love it. My kids cannot get enough of this meal. And the fresh salsa on top really adds to the savory meat. I believe salsa was meant to be enjoyed fresh-made and not cooked and bottled up. Korean Beef Bulgogi Tacos with Fresh Salsa

Ingredients

Korean Beef Bulgogi

  • 1.5 - 2 lb. flank or skirt steak, sliced very very thin
  • 3/4 c. soy sauce
  • 1/2 c. brown sugar
  • 2 tsp. minced garlic
  • 2 green onions, chopped
  • 1 tsp. grated fresh ginger
  • 2 tbsp. rice vinegar
  • 1 c. Fresh Cravings Salsa (chunky style or restaurant style)
  • 1 tbsp. gochujang (Korean chili paste)

Asian Cabbage Slaw

  • 1 tbsp. white sugar
  • 1 tbsp. soy sauce
  • 1 tbsp. rice vinegar
  • 1 tbsp. fresh lime juice
  • 1 tsp. sesame oil
  • 3 c. green cabbage, shredded thin
  • 1 red bell pepper or fresno pepper, sliced thin
  • 1 jalapeno, de-seeded and sliced thin

Additional Taco Ingredients

  • 1. c. Fresh Cravings Salsa (chunky style or restaurant style)
  • soft tortillas (can use corn or flour - these shown are half corn/half flour)
  • fresh limes, for juice
  • fresh chopped cilantro

Instructions

Korean Beef Bulgogi

  • Slice beef very thin. Place in a large ziploc bag. Set aside.
  • In a bowl, combine remaining beef marinade ingredients and stir with a stir until incorporated. Pour marinade over beef in ziploc bag and place in fridge for 2 hours up to overnight.
  • When ready to cook the meat, remove from fridge. Place 2-3 tbsp. of canola oil in the bottom of a large cast iron or stainless steel pot. Heat oil to medium high heat.
  • Carefully place meat into pot (using a slotted spoon so the marinade doesn't drip into the pot). Tongs also work well. Place all the meat in the pot and cook all the way through, stirring continually and rotating meat with tongs. Cook until small brown bits start to appear on the meat so it has a crispy flavor. 
  • Once done, remove from meat from pot with a slotted spoon onto a paper-towel lined cookie sheet. Let rest for 5-10 minutes before serving.

Asian Cabbage Slaw

  • In a medium bowl, whisk together all ingredients from white sugar through sesame oil. 
  • Pour whisked mixture over thinly sliced cabbage, pepper, and jalapeno. Set in fridge for at least 20 minutes, up to 1 hour before serving.
  • Note: I like to make this just before I cook my meat, then set in the fridge to chill while the meat is cooking.

Taco Assembly

  • To begin assembling tacos, make sure tortillas are warmed. You can do this on a large griddle over medium heat or in the microwave (then keep them warm in a tortilla warmer).
  • To assemble tacos, layer a large portion of the beef Bulgogi onto a tortilla. Then top with the Asisan cabbage slaw and a heaping spoonful of the Fresh Cravings Salsa.
  • Add a little squeeze of fresh lime juice and some fresh cilantro - enjoy!

One thing I love about these Korean Beef Bulgogi Tacos with Fresh Salsa is the contrast of the salty, savory meet with the fresh ingredients on top. I really think it makes the whole taco.
