Butternut Squash, Arugula, and White Bean Hummus Toasts

Lately I’ve been on a toast kick! It’s such an easy way to make a nice meal quickly. With a couple slices of hearty wheat toast (I used Dave’s Killer Bread – it’s so good and full of grains and seeds), some butternut squash, arugula, and white bean hummus – these Butternut Squash, Arugula, and White Bean Hummus Toasts are so good you’ll scarf them down. Don’t forget the balsamic glaze drizzled on top. It is the most necessary part of this whole recipe and brings all the flavors together so well. I get my balsamic glaze at Trader Joe’s but I’ve seen it at most grocery stores too. It’s so sweet and really you can’t get enough of it on these toasts. I buy the butternut squash pre-chopped, cleaned, and bagged in the produce section. It makes these Butternut Squash, Arugula, and White Bean Hummus Toasts so easy – just toss them on a baking sheet with some olive oil and salt and pepper and roast. While the butternut squash is roasting, toast the bread. Once bread and squash are done, just assemble the toasts!

Butternut Squash, Arugula, and White Bean Hummus Toasts

Ingredients

  • 2 slices hearty wheat bread
  • 1 c. chopped butternut squash
  • 1 c. arugula
  • 2 spoonfuls white bean hummus (I like Lantana brand)
  • balsamic glaze
  • olive oil (for roasting)
  • salt and pepper (for roasting)

Instructions

  • Start by roasting the butternut squash. (I buy it pre peeled and chopped in the produce section, but if you didn't just cut the skin off, scoop out the the seeds, and chop into 1 inch cubes.) Preheat oven to 400 degrees Fahrenheit.
  • Place chopped butternut squash onto a baking sheet. Drizzle with olive oil and toss to coat. Sprinkle with salt and pepper. 
  • Roast for 20-25 minutes. Meanwhile, toast the bread.
  • Once squash is well roasted (brown on the edges), remove from oven. Make toasts by layering white bean hummus, arugula, butternut squash, and drizzle with a generous amount of balsamic glaze.
